It's Testing Thursday! What if I told you there’s a bottle of whiskey out there blended from barrels aged 4-20 years, source is unknown but potentially Heaven Hill & Beam (!), 114 proof, and priced at $50? Then what if I told you that brand was owned by Willett and named Noah’s Mill? Without knowing, you would probably be intrigued by the stats of the bottle but maybe less so once you learn the brand. I feel like the love for this bottle has fallen off over the last few years. Even after the 15 year age statement went away, many still raved about it. It seems to have gone quiet a bit recently. Well, let’s see if this has become a shelf sleeper or truly not worthy of much praise

Verdict: The Noah's Mill has a great nose and much more mature flavor profile than most bourbons in this price range. It has classic bourbon flavors with some oak and tobacco to let you know it's got some aged barrels in the mix. It is well balanced and brings different flavors in waves from fruit sweetness to caramel to almost a cashew nut sweetness to oak and a touch of baking spice. Maybe it's the rumors influencing me on the source (Heaven Hill & Beam) of this but I'd say the Noah's is a mix of Henry McKenna 10 and a good old school 14-15 year Knob Creek pick. It's fantastic and flys under the radar so much you should be able to find it!
